Original Recipe

Ellicksander Pottage. (from Robert May's Accomplisht Cook 1660)

Ellicksander Pottage.

Chop ellicksanders and oatmeal together, being picked and washed, then set on a pipkin with fair water, and when it boils, put in your herbs, oatmeal, and salt, boil it on a soft fire, and make it not too thick, being almost boil'd put in some butter.

Modern Redaction

Ingredients:

150g alexanders
100g fine oatmeal
2 tbsp mixed herbs (thyme, chives, savory, rosemary, finely chopped)
salt, to taste
1 tsp butter

Method:

Wash the alexanders then chop very finely. Pour 500ml water into a pan and bring to a boil then whisk in the alexanders and oatmeal. Season to taste with salt then bring to a gentle simmer and cook for about 15 minutes. Add the herbs and stir to combine then continue cooking for 5 minutes more or until the oatmeal is tender and the mixture has thickened (but do not allow to become too thick).

Stir in the butter and serve immediately.
