Zoldbableves (French Bean Soup) is a traditional Hungarian recipe for a classic soup of French (green) beans cooked with small onion, tomato and green bell pepper in a sour cream and chicken stock base. Ingredients:
450g French (green) beans, topped and tailed and cut into thirds at a diagonal
1 small onion, chopped
1 medium tomato, chopped
1 green bell pepper, chopped
1 carrot, peeled, halved lengthways and sliced into half moons
salt and freshly-ground black pepper, to taste
2 tbsp butter
4 tbsp plain flour
1/2 tbsp paprika
1 bunch parsley, finely chopped
1 tsp vinegar
120ml sour cream
1.5l chicken stock
Method:
Melt the butter in a pan and use to fry the onion and bell pepper for about 8 minutes, or until the onion is golden. Add the carrot and tomato and fry for a further 5 minutes before adding the beans, stock, paprika and vinegar. Season to taste with salt and black pepper then make a slurry of the flour and 8 tbsp water and add to the soup.
Stir well to combine then bring to a simmer and cook for 15 minutes.
At this point take off the heat then stir-in the sour cream and serve ladled into soup bowls.
