Wieprozowina w Smietanie (Baked Pork Chops in Sour Cream) is a traditional Polish recipe for a classic dish of pork chops fried to colour and then finished in a vinegar and water sauce thickened with sour cream. Ingredients:

4 pork chops (about 2cm thick)
2 tbsp butter
120ml sour cream
1 tsp sugar
2 tsp vinegar
120ml water
salt and freshly-ground black pepper, to taste

Method:

Season the chops liberally on both sides then melt the butter in a pan and use to fry the pork until nicely browned all over (turn over half way through).

Whisk together the vinegar, sugar and water and pour over the chops in the pan. Bring the mixture to a boil then reduce to a simmer and cook for about 60 minutes, or until the chops are tender and cooked through (add more water if necessary).

When done, stir-in the sour cream and allow to heat through (but do not allow to boil). Transfer the chops to warmed serving plates and spoon the sauce over the top. Serve immediately.
