As with any winter vegetable soup you can change the ingredients depending on what's available.
Ingredients:
2 tbsp olive oil
1 large onion, chopped
1 small swede, peeled and diced
1 slice of pumpkin or marrow, peeled, de-seeded and diced
1/2 small cabbage, chopped
100g shelled peas (or green beans, halved)
6 tomatoes, blanched, peeled and chopped
a few cauliflower or broccoli florets
1 garlic clove, crushed
1/4 tsp dried mixed herbs
1.2l water
salt and freshly-ground black pepper, to taste
Method:
Heat the oil in a large, heavy-based saucepan and add the vegetables, garlic, herbs and water. Season to taste with salt and black pepper then bring the mixture to a boil. Reduce to a simmer, cover with a tight-fitting lid and cook for about 100 minutes.
Ladle into warmed soup bowls and served. If desired, you can garnish with a little grated cheese before serving.
