Ugandan Peanut Soup is a traditional Ugandan recipe for a classic stew of vegetables and rice in stock flavoured with curry powder and thickened with peanut butter. The full recipe is presented here and I hope you enjoy this classic Ugandan version of: Ugandan Peanut Soup.

Ingredients:
2 onions, peeled and chopped
2 celery sticks, washed and chopped
2 red bell peppers, de-seeded and cubed
2 tomatoes, cubed
3 tbsp groundnut oil
1 hot chilli, finely chopped
1 tbsp curry powder
100g brown rice
750ml water
salt, to taste
125g peanut butter
juice of 1 lime
Method:
Heat the oil in a skillet or wok. Add the onions and celery and sweat gently for 10 minute over medium heat. Now stir in the bell peppers and chilli and fry for 5 minutes more.
Sprinkle the curry powder over the top then add the water and tomatoes. Season to taste with salt, bring to a boil then cover the pan and cook over low heat for 40 minutes.
Whisk together the peanut butter and lime juice until smooth then beat this into the soup. Stir to combine and serve immediately, ladled into bowls.
