Tutumov Boerag (Courgette Cake)

Tutumov Boerag (Courgette Cake) is a traditional Armenian recipe for a classic dish of grated courgetes (zucchini) mixed with onion and cheese and bound with eggs that's set by being baked in an oven. Ingredients:

450g grated courgettes (zucchini)
1 small onion, grated
300g mature cheese, grated
5 eggs
salt and freshly-ground black pepper, to taste

Method:

Place the grated courgettes in a kitchen towel and squeeze until dry. Transfer to a bowl and mix-in the onion, cheese, eggs, salt and black pepper.

Grease a 22cm pie plate or quiche dish and spoon the courgette mixture into this. Transfer to an oven pre-heated to 170°C and bake for about 40 minutes, or until nicely browned on top and a knife inserted into the centre of the cake emerges cleanly.

Allow to cool for 5 minutes, cut into wedges and serve.
