Tomato Coulis

Ingredients:

4 fresh, medium-sized tomatoes, quartered
4 sun-dried tomatoes (they type in oil), drained
1 garlic clove, crushed
3 tbsp extra-virgin olive oil
5 basil leaves
pinch of crushed pink peppercorns
sea salt and freshly-ground black pepper, to taste

Method:

Combine the fresh tomatoes, sun-dried tomatoes, garlic, olive oil, basil and pink peppercorns in a blender. Process until you have a smooth purée then turn into a fine-meshed sieve and press through with the bak of a spoon to remove any pieces of seeds and skin.

Season the resultant purée to taste with salt and freshly-ground black pepper then store in the refrigerator until needed.
