Ting is the Botswanan name for fermented maize meal or sorghum and it is cooked by boiling in water. For breakfast, it is sweetened with sugar and lightened with milk so that it has a porridge-like consistency but to serve as an accompaniment, it is cooked thicker, in the same manner as maize meal bogobe.
Ingredients:
500ml water
410g ting (fermented maize meal or fermented sorghum meal)
1/2 tsp salt, or to taste
Method:
Bring the water and salt to a boil in a pan, slowly add the maize meal in a steady stream, until it forms a cone shape in the centre of the pan. Add a lid, bring to a simmer and cook for about 20 minutes, or until a 'skin' has formed around the maize meal.
Now stir the mixture with a fork until the consistency is fine and crumbly. Replace the lid and simmer over very low heat (this is important) until done (about 25 minutes), stirring occasionally with a fork to break any lumps.
