Ingredients:
500ml water
1/2 tsp salt
410g maize meal
Method:
Bring the water and salt to a boil in a pan, slowly add the maize meal in a steady stream, until it forms a cone shape in the centre of the pan. Add a lid, bring to a simmer and cook for about 20 minutes, or until a 'skin' has formed around the maize meal.
Now stir the mixture with a fork until the consistency is fine and crumbly. Replace the lid and simmer over very low heat (this is important) until done (about 35 minutes), stirring occasionally with a fork to break any lumps.
If you cook for longer, the maize mixture will become drier and crumblier in texture.
