Thiove is a traditional Mozambican recipe for a classic accompaniment of hominy cooked with peanuts and ground butter beans to a thick porridge. The full recipe is presented here and I hope you enjoy this classic Mozambican version of: Thiove.

Ingredients:
350g hominy (maize with the germ removed)
220g peanuts, pounded to a paste in a mortar
4 tbsp butter bean powder (grind dry butter beans finely in a coffee grinder)
salt, to taste

Method:
Bring 1.2l water to a boil in a saucepan. Add the hominy, season with salt, bring back to a boil then reduce to a simmer, cover and cook for 4 hours or until you have a smooth paste.
Once cooked, stir in the peanut paste and the ground butter beans. Stir thoroughly and adjust the seasoning to taste.
Turn the batter into a greased baking dish. Transfer to an oven pre-heated to 160°C and bake for about 30 minutes, or until set and golden brown on top.
