Tepsi kebabı (Turkish Tray Kebab)

Tepsi kebabı (Turkish Tray Kebab) is a traditional Turkish recipe for a classic deconstructed kebab of a minced meat mixture topped with tomato purée and sweet red pepper paste that's oven baked to cook. This is an iconic deconstructed kebab from South-Eastern Turkey

Ingredients:

800g minced beef, lamb or a mixture (min 25% fat)
50g lamb tail fat (kuyruk yağı), or another animal fat, finely chopped (optional)
1 small onion, very finely chopped
30g flat-leaf parsley, (without thick stalks), finely chopped
4 garlic cloves, finely chopped
1 tbsp pul biber (Aleppo pepper)
1 ¼ tsp fine sea salt, more if using US kosher salt

Sauce & garnish
25g tomato purée
25g Turkish sweet red pepper paste (tatlı biber salçası)
200ml boiling water
a few Turkish green peppers (sivri/çarliston biber) sliced into thin strips
1 red onion, cut into wedges
2 tomatoes, cut into wedges

Method:

Pre-heat your oven to 190°C. Grease 1 round roasting tin of approx 26–28cm diameter with oil. Alternatively, you can use a rectangular roasting tin of approx 20×30cm.

Set the minced meat on a large cutting board. Add the chopped animal fat (if using), onion, flat leaf parsley, garlic, pul biber (Aleppo pepper) and salt. Chop with a large knife until well mixed (around 2–3 minutes). This method gives a better texture than simply mixing everything by hand.

Place the meat in the roasting tin, pressing it gently with your knuckles into the shape of a large burger, filling the entire base of the roasting tin, making sure to not to overly compact the meat.

Mix together the tomato paste, red bell pepper paste and boiling water in a bowl until completely homogenous. Spread this mixture over the top of the meat. Top with pieces of peppers and tomatoes in a pattern you like.

Transfer to the centre of your pre-heated oven and bake until nicely coloured and cooked through (about 30–40 minutes).

Remove from the oven and set aside to cool for a few minutes, then cut into portion sized pieces and serve.
