Tajine Misir Zeetoon (Tagine of Chicken with Olives and Preserved Lemon)
Tajine Misir Zeetoon (Tagine of Chicken with Olives and Preserved Lemon) is a traditional Moroccan recipe for a classic stew of chicken with onions, coriander, preserved lemon and green olives in a lightly-spiecd sauce flavoured with saffron. Ingredients:
80ml olive oil
1 large onion, thinly sliced
1 garlic clove, minced
1 tbsp flat-leaf parsley, finely chopped
2 tbsp coriander (cilantro) leaves, chopped
1 tsp salt
1/2 tsp freshly-ground black pepper
6 saffron threads, crumbled
1.1kg chicken, cut into serving pieces
6 slices of preserved lemons
50g green beans, sliced (optional)
1/2 lemon, cut into four wedges
45g green olives, pitted
Method:
Heat the oil in a tagine or flame-proof casserole. When hot add the onion, garlic, parsley, coriader leaves, salt, black pepper and saffron. Stir to combine then add the chicken pieces, ensuring that you turn them to coat with the spiced onion mixture then add the preserved lemons.
Cover the pan and simmer, turning occasionally for about 100 minutes, or until the chicken is very tender (add a little butter or water if the ingredients begin to stick and burn). In the meantime, fry the lemon wedges until lightly caramelized. Take out the chicken and place on a warm serving plate and lay the fried lemon pieces on top.
Add the beans then cook the liquid in the pan over high heat until reduced to a thick consistency then stir in the olives and allow to heat through. Pour over the chicken and serve.
