Stuffed Breadfruit is a traditional Trinidadian recipe for a classic dish of baked breadfruit stuffed with minced beef in an onion and tomato puree sauce. The full recipe is presented here and I hope you enjoy this classic Trinidadian version of: Stuffed Breadfruit.

Ingredients:
1 breadfruit
2 tbsp cooking oil
250g minced beef
1 tbsp ground allspice
1 onion, chopped
salt and black pepper, to taste
2 tbsp tomato purée
60ml water
Method:
Cut the stem end of the breadfruit to form a lid then scoop out the middle of the fruit. Add the oil to a pan and use to cook the beef, onion and seasonings for about 6 minutes or until the beef is well browned. Pour off any excess oil then stir-in the oil and water. Mix to combine then season to taste and use the mixture to stuff the breadfruit.
Replace the stem, place on a lightly-greased baking tray then place in an oven pre-heated to 200°C. Bake for 30 minutes then reduce the temperature to 170°C and cook for a further 30 minutes, or until the breadfruit is tender (test with a fork or skewer).
