Šproty v smetane (Smoked Sprats in Sour Cream [Шпроты в сметане]) is a traditional Russian recipe for a classic dish of smoked sprats cooked in sour cream with onion that is typically served accompanied by boiled potatoes. Ingredients:
320g (2 tins) smoked sprats in oil, drained
100g red onion, finely grated or very thinly sliced
200ml sour cream
ground allspice, to taste
freshly-ground black pepper, to taste
Method:
Remove the heads, tails and backbones of the smoked sprats. Wash them well and set aside.
Pour the sour cream into a small pan and bring to a boil. Stir in the grated onion and season to taste with salt and black pepper.
Bring just to a boil then add the sprats. Reduce to a simmer and cook for 8 minutes more. Take off the heat and serve accompanied by mashed potatoes.
