Ingredients:

150g raw, smoked, bacon finely diced
2 medium onions, chopped
500g potatoes, boiled, peeled and cut into medium slices
1 tbsp lard
4 tbsp to 5 tbsp sour cream
salt and freshly-ground black pepper, to taste

Method:

Melt the lard in a large frying pan or skillet then add the onions and bacon and fry or about 3 minutes before stirring-in the potatoes.

Continue frying for about 8 minutes, or until golden brown then season to taste, mix in the sour cream and serve.
