Spanagh-Banir Boerag (Cheese and Spinach Filo Bake)

Spanagh-Banir Boerag (Cheese and Spinach Filo Bake) is a traditional Armenian recipe for a classic baked dish of spinach mixed with cream cheese, Feta cheese, onions and garlic interleaved with layers of filo pastry. Ingredients:

900g spinach, washed and drained and chopped
1 bunch spring onions, finely chopped
3 onions, finely chopped
3 garlic cloves, finely chopped
225g cottage cheese
225g Feta cheese
6 eggs
450g butter, melted
75g parsley, chopped
450g filo pastry
salt and freshly-ground black pepper, to taste

Method:

Combine the spinach, spring onions, onions and garlic in a bowl then stir in the cottage cheese until smooth before adding the Feta cheese, eggs (unbeaten) and the salt and pepper. Add half the melted butter then thoroughly mix all the ingredients to combine.

Meanwhile, liberally grease a baking tin (about 25 x 35cm in size). Liberally brush six Filo pastry sheets with melted butter and arrange in the base of the tin. Add a layer of spinach mix then lay six buttered pastry sheets. Repeat the layering process until all the spinach and cheese mixture has been used and top with a layer of pastry.

When ready, transfer to an oven pre-heated to 180°C and bake for 30 minutes. Remove from the oven and pour any remaining melted butter over the top. Return to the oven and bake for a further 30 minutes.

Remove from the oven and allow to cool before cutting into squares (you should get about 20). Serve warm or cold.
