Spanachorizo (Rice Pilaff with Spinach) is a traditional Cypriot recipe for a classic vegetarian accompaniment of rice and spinach in an onion and oil base. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Rice Pilaff with Spinach (Spanachorizo).

Ingredients:
1kg fresh spinach
120g rice, washed and drained
500ml water
120ml oil
50g onions, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Wash the spinach thoroughly, drain then chop into small pieces.
Add the oil to a deep pan and use to fry the onions. Stir in the spinach and continue frying until just wilted. Now add the water and season to taste. Cover the pan and cook for 35 minutes then stir in the rice.
Stir to mix, cover and cook gently for about 20 minutes, or until the rice is tender and all the liquid has been absorbed.
About 10 minutes before the pan is ready to be taken off the heat cover with a thick cloth and place the lid on top of the cloth (this keeps the rice moist and fluffy).
