Sieden Hähnchen (Simmered Chicken) is a traditional German recipe for a classic dish of chicken that's jointed and lightly fried before being stewed in a mix of onions, chicken stock and mushrooms and which is finished by the addition of sour cream. Rub the chicken pieces all over. Combine the flour and paprika on a large plate or baking tray and dredge the chicken pieces in this until thoroughly coated. Now melt the butter in a large frying pan (or skillet) and fry the chicken pieces until golden brown all over (about 15 minutes).
Remove the chicken pieces to a baking dish then add the onions to the frying pan and cook until golden brown (about 10 minutes).
Add the mushrooms and fry for a further 5 minutes. Spoon this mixture over the chicken then cover the baking dish and transfer to an oven pre-heated to 170°C.
Bake for 45 minutes and, at the end of this time, remove the covering and spoon the sour cream over the chicken pieces. Sprinkle the parsley over the top and return to the oven for a further 15 minutes. Serve hot.
