Samsas (Bean Fritters) is a traditional Burkinabe (from Burkina Faso) recipe for a classic fritter of beans, onion and garlic paste bound with flour that's fired and served with a tomato sauce. This dish is one of the most popular street snacks all over Burkina Faso and you can get these bean fritters on almost every street corner.
Ingredients:
For the Fritters:
500g cooked white beans (tinned are fine)
1 onion, chopped
1 garlic clove, chopped
75g plain flour
1/4 tsp cayenne pepper
salt and freshly-ground black pepper, to taste
120ml oil for frying
For the Sauce:
1 tin (400g) peeled and chopped tomatoes
1 garlic clove
2 tbsp oil
generous pinch of cayenne pepper
Method:
Traditionally these are made by hand with a mortar, but they are easier to make in a food processor. Combine the beans, onion and garlic in a food processor and pulse to chop then mix to a coarse paste. Season to taste with the cayenne pepper, salt and black pepper then work in just enough flour to form a stiff paste.
Form the mixture into large balls (about the size of an apricot then roll in a little flour to coat). Heat the oil in a pan, add the bean balls and fry until nicely browned all over and heated through (about 10 minutes).
For the sauce, heat the oil in a pan, fry the garlic for 20 seconds, add the tomatoes and cayenne pepper. Bring to a simmer and cook for about 10 minutes or until the tomatoes have broken down.
The bean fritters can be served plain or they can be served in the tomato sauce.
