Roast Pepper and Gorgonzola Pizza

Method:

Either roast the red bell peppers in a medium oven for about 25 minutes, or until the skin begins to blacken or, preferably, place the peppers in a gas flame and turn every time the skin begins to blacken. Set the bell peppers aside until they cool then remove the skins. Core the peppers then slice into thin strips and set aside.

Prepare a Boboli Pizza Crust as per the recipe. When the crust is ready spread the garlic oil evenly across it's surface, covering almost to the edge. Cover with the Gorgonzola slices and the bell pepper then scatter the Mozzarella cheese over the top.

Place in an oven pre-heated to 200°C and bake for about 10 minutes, or until the cheese is melted and golden brown in colour. Cut into wedges and serve immediately.
