Poulet au Citron Vert (Chicken with Limes)

Poulet au Citron Vert (Chicken with Limes) is a traditional Congolese recipe (from Democratic Republic of the Congo) for a classic dish of chicken marinated in lime juice that is barbecued and then finished as a stew with onions, limes, spices and chillies. Ingredients:

1 oven-ready chicken, jointed
10 limes
12 small onions, chopped
1 bayleaf
1 sprig of thyme
1 hot chilli
salt and freshly-ground black pepper, to taste
oil for frying

Method:

Pare the zest from the limes and squeeze to extract the juice. Take the lemon zest and slice thinly into shreds. Make incisions into the chicken meat and insert the strips of lime zest.

Place the chicken pieces in a bowl, season and pour over the lime juice and set aside to marinate in the refrigerator for 3 hours.

After this time, place the chicken either on a barbecue or under a hot grill (broiler) and cook for about 30 minutes or until done through (reserve the marinade).

Heat oil in a pan, add the onions and fry for 6 minutes then add the chopped chilli and fry for 2 minutes more. Add the bayleaf and thyme then stir in the reserved lime marinade. Bring to a simmer then add the cooked chicken pieces and simmer gently, covered, for 20 minutes.

Serve hot, accompanied by boiled rice or boiled sweet potatoes.
