Ingredients:

1kg dried fish, washed and broken into small pieces
2 onions, chopped
3 tomatoes, chopped
4 tbsp groundnut oil

Method:

Place the dried fish in a bowl, cover with plenty of cold water and set aside to soak for 2 hours (this removes any excess salt). Drain the fish, wash well then place in a bowl of hot water and stir briskly to remove any grit and sand. Drain well

Heat the groundnut oil in a wok. When hot add the onions and fry for 4 minutes then add the tomato and the fish.

Bring to a simmer, cover and cook for 20 minutes, or until the sauce is thick and the fish is tender.

Serve hot with rice, pap or cassava.
