This is a traditional Nigerian mix of local herbs and spices. I have been able to source most of the native ingredients via a contact in a Dakar market (where I travel frequently) but these spices and herbs are generally not available outside Nigeria. As a result, as well as the native spice mix I give a substitute using more generally-available spices that approximate the flavour of the native version. In terms of flavour, the spice mix is a classic African mix of bitter, acid and sweet flavourings.

Method:

Simply combine all the ingredients together and grind to a fine powder in a clean coffee grinder.

Store in an air-tight jar and keep in your spice cupboard (it will last several months).
