In other regions of Mozambique, this dish is also known as Matsavo.

Ingredients:

500g pumpkin leaves (or courgette leaves), washed well
500g fresh or dried prawns
400ml coconut milk (either made fresh from 2 coconuts or tinned)
1 onion, sliced into thin wedges
2 tomatoes, chopped
1 tsp salt
5 piri-piri chillies
300g peanut flour (finely ground peanuts)
500ml water

Method:

Remove the midribs from the pumpkin leaves then wash the leaves thoroughly. Stack the leaves then shred them very finely.

Add the coconut milk and shredded pumpkin leaves to a pot. Cook slowly over a low heat for between thirty and forty minutes then stir in the onions, tomatoes, pawns, chillies and salt. Add a little water, if needed, and bring to a boil.

Stir in the peanut flour and if the mixture looks too thick add a little more water. Cook, stirring constantly, until the peanuts are no longer raw (about 5 minutes), taking care the mixture does not catch on the base of the pan.

Serve hot with white rice, upswa (Mozambican ugali) or maguinha.
