Korrat (Stewed Leeks) is a traditional Egyptian recipe for a classic accompaniment of leeks stewwed with garlic, sugar and lemon juice. The full recipe is presented here and I hope you enjoy this classic Egyptian version of: Stewed Leeks (Korrat).

Ingredients:
900g leeks (white parts only)
3 garlic cloves, crushed
1 tbsp sugar
4 tbsp vegetable oil (or olive oil)
juice of 1 lemon
salt, to taste
Method:
Slice the leeks into 5cm pieces and set aside. The oil to a pan then stir in the garlic and sugar. Fry for a few minutes (until the sugar becomes lightly caramelized) then add the leeks, turning them to coat in the sugar mixture.. Sprinkle the lemon juice over the top, season with salt then add just enough water to barely cover.
Bring to a simmer then cook gently over low heat for about 12 minutes, or until the leeks are tender and the liquid has been absorbed. Serve either hot or cold as an accompaniment.
