Karjalanpaisti (Karelian Stew)

Karjalanpaisti (Karelian Stew) is a traditional Finnish recipe for a classic stew of pork and beef with carrots flavoured with allspice and bay leaf that's traditionally served accompanied by lingonberry jam. Ingredients:

¼ kg beef round steak (naudan ulkopaisti or kulmapaisti)
¼ kg pork round steak (porsaanpaisti)
1 large onion, peeled and cut into large pieces
2 carrots, peeled and chopped into large pieces
1 tsp salt
10 whole allspice berries
1 bayleaf
Water
A little butter

Method:

Cut the meat into 3 x 3 cm cubes. Butter the surface of a large stew pot (a cast iron casserole (Dutch oven) is good here).

Brown meat cubes in a separate pan with butter. Fry until nicely and evenly browned all over. After browning the meat transfer to your stewing pot and add in all the remaining ingredients.

Rinse the pan used for browning the meat with water and pour the water into the pot. The water should only just cover the meat and vegetables, but not be any higher. Add in the spices.

Bring the ingredient so a gentle simmer then transfer to the centre of an oven pre-heated to 175°C and cook for 2-3 hours. If the meat starts to catch and burn, cover the meat with foil or a lid.

Serve with boiled potatoes or mashed potatoes, lingonberry jam, and pickled cucumbers.
