Ingredients:

1kg French (fine) beans
100g onion, chopped
2 garlic cloves, chopped
75ml olive oil
100g cured ham, finely diced
salt and freshly-ground black pepper

Method:

Top and tail the beans then remove any tough strings from the edges. Wash in cold water then drain. Bring a pan of lightly-salted water to a boil, add the beans and boil rapidly for about 4 minutes to keep the beans crisp and green.

Heat the oil in a pan, add the onion and garlic and cook for about 6 minutes, or until lightly golden. Add the ham then drain the beans and add these to the pan. Toss to combine then cover with a lid and cook for 2 minutes more.

Season to taste and serve.
