This is a variation on Bean Crock, with the end result being a soup rather than a stew.
Ingredients:
225g haricot beans
55g onion, chopped
1.8l beef stock
Salt and freshly-ground black pepper
55g carrots, chopped
Method:
Wash the beans thoroughly under running water and place in a heavy-based pan.
Add the beef stock and then bring to the boil. Reduce to a simmer, cover and cook for one hour, skim off any foam from the surface, then add the other ingredients.
Return to a boil, reduce to a simmer and cook for a further 30 minutes.
