Irish Parliament Bean Soup

Ingredients:

225g dried haricot/Navy Beans, picked over and washed
1l Water
1 small Onion, peeled and chopped
1 Celery stick, halved lengthways and finely sliced
1 Carrot, chopped
Salt and freshly-ground black Pepper
1/4 tsp dried Thyme, crumbled
1 Bay Leaf
1 Ham Bone

Method:

Rinse the haricot beans in cold water and soak overnight to soften.

Drain the beans, transfer to a stock pot then add the ham bone, water, thyme, bay leaf and black pepper. Bring to a simmer, cover and cook, stirring occasionally until the beans are tender (about 90 minutes).

At this point add the vegetables, season to taste with salt and cook for about 25 minutes, or until the vegetables are tender and the soup has thickened.

Remove ham bone, adjust seasonings to taste and enjoy with Irish Brown Bread or soda bread.
