Ignames à la sauce tomate (Yams with Tomato Sauce)
Ignames à la sauce tomate (Yams with Tomato Sauce) is a traditional Burkinabe (from Burkina Faso) recipe for a classic accompaniment of yams cooked in a tomato sauce and chilli base. Ingredients:
1.5kg yams
2 onions, chopped
1 small tin of tomato purée
2 hot chillies, pounded to a paste
oil for frying
salt and freshly-ground black pepper, to taste
Method:
Wash and peel the yams then cut into 5mm thick slices.
Heat a little oil in a wok, add the onions and fry for about 6 minutes, or until lightly browned. Stir in the tomato purée and fry until lightly browned then work in 300ml water and bring to a simmer.
Add the yam slices and stir in the pounded chillies then season to taste with salt and black pepper.
Reduce to a low simmer, cover and cook for about 30 minutes, or until the yam pieces are fork tender (add more water as needed).
Serve hot as an accompaniment.
Typically this is served as an accompaniment to fried chicken or even for burgers!
