Hekele (Herring Starter)

Hekele (Herring Starter) is a traditional Polish recipe for a classic starter or salad of chopped, pickled, herring mixed with chopped hard-boiled eggs, chopped cucumbers and onion flavoured with mustard and seasoned with salt and black pepper that is traditionally served as a Christmas starter. This is a classic Polish recipe (from the region of Silesia) for a classic starter of herring with eggs and pickled cucumbers. In many places this is served as a starter for Christmas supper.

Method:

Cut the herring into small pieces, removing any bones as you do so. Boil the eggs until hard (about 8 minutes) then drain and cool. Peel the pickled cucumbers and chop finely.

Chop the eggs then combine in a bowl with the herring, cucumbers and onion. Stir in the mustard and season to taste. Divide between small plates, garnish with chopped chives and serve.
