Greek Pizza

This recipe uses the flavours of a classic Greek Salad: olives, olive oil, tomatoes, cucumbers, oregano and bread as a toping for a pizza. The flavours hinge on the tomatoes and you need to buy the most flavourful sun-ripened tomatoes that you can get.

Ingredients:

1 bread dough pizza base
120g Feta cheese, crumbled
2 large ripe red tomatoes, sliced
60g pitted Kalamata olives, sliced into rings
1 bunch fresh basil, chopped
2 tsp dried oregano, crumbled
1 small cucumber, peeled, de-seeded and cubed
olive oil
salt and black pepper
2 tbsp Parmesan cheese
2 tbsp white bread breadcrumbs

Method:

Turn the pizza dough onto a lightly-floured surface and either roll or pull until it's large enough to fit snugly in a lightly-greased 30 x 18cm Swiss roll tin (or other similar rectangular tin) and using your thumb and forefinger pinch the edge of the pizza to create a raised lip. Cover the dough with a kitchen towel and set aside in a warm place to raise for 10 minutes. Place the pizza base in an oven pre-heated to 200°C and bake for about 6 minutes.

Remove the pizza base from the oven then cover with the sliced tomatoes and sprinkle the basil, oregano, olives and cubed cucumber over the top. Mix together the breadcrumbs and parmesan cheese then scatter over the top of the pizza before covering with the Feta cheese. Drizzle lightly with olive oil then season.

Return the pizza to the oven and bake for about 10 minutes more, or until the curst is golden brown. Cut into generous squares and serve hot.
