Ingredients:
60g butter
450g young or baby turnips, peeled but left whole
3 tsp brown sugar
1/2 tsp salt
a little strong vegetable stock
2 tbsp fresh parsley, chopped
Method:
Melt the butter in a pan then add the turnips, sugar, salt and enough of the stock to come half way up the carrots. Bring to a gentle simmer and continue cooking gently, uncovered, shaking the pan occasionally, until the turnips are soft.
Remove the turnips from the pan with a slotted spoon and set aside to keep warm. In the meantime bring the residual liquid in the pan to a rapid boil until it reduces to a rich glaze. Return the turnips to the pan a few at a time, turning them until covered in the glaze. Transfer to a warmed serving bowl then garnish with the parsley and serve.
