Ghanaian Street Indomie

Instant noodles are very popular both in Nigeria and Ghana where they're called 'indomie'. This is the Ghanaian street food version of the popular dish.

Ingredients:

8 packets Indomie (instant noodles)
7 tbsp vegetable Oil
2 bunches spring onions, sliced into about 2cm (4/5 in) lengths
2 carrots, halved and cut into strips
1 small white cabbage, shredded
1 small green bell pepper, cut into strips
1 red onion, sliced thinly
1/2 habanero chilli, minced
4 frankfurters, cut into rounds
4 eggs, beaten
1 tsp hot chilli powder
salt and freshly-ground black pepper

Method:

Bring a large pot of lightly-salted water to a boil then add the seasonings from the noodles along with 3 tbsp vegetable oil. Once boiling add the noodles and cook for about 3 minutes, until tender. Drain the noodles in a colander and set aside (you want them slightly under-done at this point as they will cook further later).


Heat 4 tbs oil in a wok or deep frying pan. Once hot, add the frankfurter pieces and fry for 2 minutes. Move the sausages to one side, add the eggs and cook to form an omelette then break this into pieces. Gently add all the vegetables and stir-fry for about 4 minutes, until the onions are soft.

Now add the drained noodles and carefully break up to mix with the vegetables. Season with hot chilli powder and add salt and black pepper to taste. Carefully turn the noodles and vegetables to incorporate the seasoning.

Turn into a warmed dish and serve.

Other ingredients you can use are tinned sardines and corned beef.
