Ingredients:
400g cooked chickpeas
1 small red onion, diced
80g Feta cheese, crumbled
50g vine tomatoes, chopped
1 pickled Jalapeño chilli
1 egg yolk
a few leaves of fresh basil and coriander, shredded
fresh rocket leaves, to garnish
2 pain rustique buns to serve
sliced cucumber, to serve
olive oil, for frying
Method:
Heat a little olive oil in a small frying pan and use to cook the red onion until soft and golden (about 8 minutes). Add the tomatoes to the pan and bring to a simmer. Now stir in the shredded rocket and basil. Take off the heat, allow to cool slightly and turn into a food processor.
Add the cooked chickpeas, chilli, Feta cheese and egg yolk. Process to a thick paste. Divide the mixture into two parts and, with damp hands, shape the mixtures into large patties. Now heat 1 tbsp olive oil in a frying pan and when hot use to cook the patties for about 5 minutes, or until golden brown on the base. Turn over and cook for a further 5 minutes, or until golden brown and cooked through.
Slice open the buns, garnish with rocket leaves then add the fried patties, top with the cucumber slices and serve.
