Faggi Ksidhati (Lentil Soup with Vinegar)

This is another traditional Cypriot lenten dish.

Ingredients


100g lentils
75g spring onions, finely chopped
250ml coriander (cilantro) leaves, finely chopped
250ml lettuce, finely chopped
1 tbsp plain flour
120ml red wine vinegar
salt and freshly-ground black pepper, to taste

Method:

Wash the lentils thoroughly then turn into a deep pan with 2.5l cold water. Cook gently over low heat for 45 minutes then add the garlic and spring onions. Simmer for 10 minutes then add the lettuce and coriander leaves and cook for 10 minutes more.

Whisk the flour in a bowl to a smooth slurry with water. Whisk this into the soup stock, stirring constantly. Add the vinegar and season to taste with salt and black pepper.

Continue cooking for 5 minutes more, or until thickened.

Ladle into warmed soup bowls and serve.
