Djaratankai

Ingredients:

1kg mutton (with bones)
200g peanut butter
500g okra
1 hot chilli, sliced
1 red bell pepper, sliced into strips
2 onions, peeled and sliced
2 garlic cloves, crushed
2 Maggi (or stock) cubes
2 tbsp oil for frying
salt and freshly-ground black pepper, to taste

Method:

Wash the okra, remove the stems then slice as thinly as you can.

Heat the oil in a pan, add the mutton and fry until browned. Cover with water, bring to a simmer and cook, covered, for 30 minutes. Now add the onions, okra, chilli, bell pepper and garlic. Crumble in the stock cube, return to a simmer, cover the pan and cook for a further 45 minutes, or until the meat is completely tender.

Mix the peanut butter with a little of the hot stock to form a paste then mix this into the meat mixture. Season to taste with salt and black pepper.

Cook, stirring frequently, for a further 15 minutes. Serve hot, accompanied by white rice.
