Canja

Ingredients:

500g chicken (thigh meat preferred), boned and skinned
2 onions, chopped
2 carrots, chopped
1 chicken stock cube
200g short-grain rice
oil for frying
salt, to taste

Method:

Heat a little oil in a pan, add the carrots and the chicken pieces and fry until the chicken is coloured. Crumble over the stock cube then pour in enough water to cover the ingredients. Bring to a boil, reduce to a simmer then stir in the rice.

Cook gently, stirring frequently, for about 30 minutes or until the mixture is almost dry and the chicken is tender.

Adjust the seasonings to taste and serve hot accompanied by a greens or tomato-based sauce.
