Ingredients:
1 cornmeal dough pizza base
450g Chili with Beans
50g Jalapeño peppers, chopped
450g minced beef
1 onion, chopped
2 medium tomatoes, thinly sliced Cajun Hot Sauce, to taste
1/4 tsp chilli powder, or to taste
240g Mozzarella cheese, grated
spring onion greens, sliced, to garnish
Method:
Add a little oil to a large frying pan on medium heat then stir-in the beef and onion. Fry until the meat is nicely browned and the onion is softened (about 8 minutes) then drain any excess fat, take off the heat and set aside.
Turn the dough onto a lightly-floured work surface and roll into a 25cm diameter circle. Transfer to a greased baking tray then using your thumb and forefinger roll the edges of the pastry to form a rim. Cover and allow place in a warm spot to raise for 10 minutes.
Mix the chilli beans with the jalapeño peppers then spread evenly over the surface of the pizza dough and top with the fried beef and onion mixture. Drizzle a little hot sauce on top (if desired) then mix together the cheese and chilli powder and sprinkle over the top of the pizza.
Place in an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the base are golden and crisp.
Top with the sliced spring onions then serve immediately, cut into wedges.
