Frango com Quiabo (Chicken with Okra)

Ingredients:

1 chicken, cleaned and cut into serving pieces
2 onions, chopped
2 large tomatoes, diced
4 garlic cloves, minced
14 okra, tops removed and finely diced
olive oil to fry
salt and black pepper, to taste

Method:

Add oil to a pan and use to fry the chicken until golden all over. Remove and set aside. Add the onions and garlic to the pan and fry until soft (about 6 minutes). Transfer the contents of the pan to a casserole dish along with the onions, tomatoes and okra. Stir in 250ml water then add the chicken.

Bring to a boil, reduce to a simmer then cover tightly and cook gently until the chicken is done (about 50 minutes).

Adjust the seasoning and serve on a bed of rice.
