Mexican Carne Asada Street Tacos

Ingredients:

2 tbsp reduced soy sauce
2 tbsp freshly squeezed lime juice
2 tbsp rapeseed oil, divided
3 garlic cloves, minced
2 tsp chilli powder
1 tsp ground cumin
1 tsp dried oregano, crumbled
675g skirt (bavette) steak, cut into 1cm pieces
12 mini flour tortillas, warmed
100g diced red onion
20g chopped fresh coriander leaves
1 lime, cut into wedges

Method:

In a medium-sized bow, combine the soy sauce, lime juice, 1 tbsp rapeseed oil, garlic, chilli powder, cumin and oregano.

In a large sealable plastic bag or a large bowl mix together the beef steak and the soy sauce mixture. Invert or stir a few times to coat the beef in the marinade then set aside to marinate for between 1 and 4 hours, turning or stirring occasionally during this time.

When ready to cook the beef, set a large, heavy-based, frying pan over medium-high heat. Add the remaining 1 tbsp oil then add the steak and all the leftover marinade. Cook, stirring frequently, until the steak has browned all over and the marinade has reduced (about 5–6 minutes, or until the beef has reached your desired level of done-ness).

Serve the steak in tortillas topped with onion, coriander and lime juice.
