Ingredients:

3 cape pigeons
2 onions, chopped
1 tbsp fresh ginger, grated
1/2 tsp dried, crushed, chillies
400ml coconut milk
oil for frying

Method:

Wash the pigeons, halve them and pat dry. Heat oil in a large pot or casserole and fry the pigeon pieces until browned all over. Add the onions, ginger and chillies and fry for about 8 minutes, or until the onions have browned.

Return the pigeons to the pan and pour in the coconut milk. Bring to a boil, reduce to a simmer, cover and cook for about 45 minutes or until the pigeons are tender. Serve hot accompanied by rice.
