The giant cane rat is one of Africa's largest rodents. It is an agricultural pest and is hunted for bush meat. Recently there have been efforts to farm it as mini livestock, particularly in Ghana and Nigeria.
Pound together the onion, chopped chillies and Maggi (or meat stock) cubes in a mortar until you have a paste.
Split the cane rats lengthways then cut into quarters. Heat the oils in a large pot, add the cane rat pieces and fry until nicely browned all over. Now add the onion and chilli paste and stir fry for about 6 minutes, or until lightly browned.
Pour in enough water to cover the ingredients then bring to a boil. Reduce to a simmer, add the tomatoes and whole chillies then cover with a lid and cook gently for about 80 minutes, or until the cane rat is very tender. Adjust the salt to taste.
