Bubble and Squeak

This is a classic leftovers dish, originating in the south-east of England but now made country-wide. It started out as a way of using-up the remains of a Sunday roast and traditionally is a fry-up of beef, potatoes and cabbage. Many variants have emerged since, with the addition of carrots and other greens and the substitution of other meats or no meat at all. However, true bubble and squeak should always contain potatoes and cabbage.

The name itself is derived from the sounds that the dish makes as it cooks.

Ingredients:

25g butter
1 medium onion, finely chopped
450g cooked mashed potatoes
225g cooked cabbage, finely shredded
6 slices cooked beef, chopped
salt and black pepper, to taste

Method:

Melt the butter in a large frying pan then add the onion and fry gently for about 5 minutes, or until soft. Add the potatoes, cabbage and beef. Stir to combine then season to taste. Allow to fry for about 2 minutes without stirring, then continue frying, stirring frequently, for about 15 minutes or until heated through and nicely browned.

A variation is to flatten this down onto the dish then fry on one side for five minutes then to turn over as much as you can in one go (repeat with any pieces you didn't get) and fry for five minutes on the other site, a bit like a huge omelette. Cut into pieces and serve.
