Botswanans are all justifiably proud of their meats and the classic method of cooking it is to charcoal grill on a barbecue. Often good quality cuts are simply lightly seasoned and then cooked as they are or they are smeared with a paste made from oil, a Maggi cube and the local barbecue spice blend.

Ingredients:

4 good quality beef steaks (about 300g each)
2 Maggi cubes
4 tbsp soya oil
2 tsp barbecue spice blend

Method:

In a bowl, work together the oil, Maggi cubes and barbecue spices to a smooth paste. Smear this mixture over the meat then set aside to marinate as you heat your barbecue.

When the barbecue is hot, add the meat and cook for about 10 minutes per side, or until done to your lining.

Serve immediately with roasted yams and morogo.
