Ingredients:
240ml vegetable oil
1 green Scotch bonnet chilli, chopped
1 garlic clove, crushed
1 medium whole chicken, seasoned and jointed
120ml tomato ketchup
1 tsp Worcestershire sauce
1 tsp Chinese chilli sauce
250ml water
1/2 tsp Jerk seasoning
1 tbsp brown sugar
1 1/2 tsp gravy browning
250g tinned mixed vegetables
Method:
Heat the vegetable oil in a deep frying pan or wok, add the chilli and garlic and fry for about 1 minute, or until browned. Remove the chilli and garlic with a slotted spoon then add the chicken pieces to the oil. Fry until golden brown then remove with a slotted spoon and drain on absorbent paper.
Meanwhile, combine the tomato ketchup, Worcestershire sauce, Chinese sauce, water, Jerk seasoning and sugar in a small pan. Mix thoroughly then add the gravy browning to colour. Bring to a boil, reduce to a simmer then cover and cook until thickened (about 15 minutes).
Add the chicken pieces to the sauce and allow to simmer for 5 minutes. Now add the mixed vegetables, chilli and garlic and simmer for a further 5 minutes. Serve hot with roasted breadfruit or rice and peas and a crisp side salad.
