This is a poor man's soup, to be made when there is not enough money around to buy meat. Flavourful and substantial, the soup is served with generous quantities of day-old bread and is considered to be an entire meal in and of itself.
Ingredients:
450g dried, skinless, broad (fava) beans
1l water
2 tbsp olive oil
1/2 tsp salt, or to taste
2 tsp harissa
2 tsp ground cumin seeds
lemon wedges, to serve
Method:
Combine the broad (fava) beans and water in a pan over medium heat. Bring to a simmer and cook for 60 minutes, or until the beans are soft (add more water, about 120ml) if the soup dried too quickly.
Use a potato masher to coarsely mash the beans in the pan. Now stir in the oil, salt, harissa and ground cumin then return to a simmer and cook gently over low heat for about 20 minutes. Serve accompanied by bread, lemon wedges an a dipping bowl of harissa.
