Ingredients:

2 garlic cloves, chopped
500g veal steaks
60g peanuts, finely chopped
3 ripe tomatoes, blanched, peeled and chopped
2 onions, thinly sliced
100ml groundnut oil
salt and freshly-ground black pepper, to taste
100ml water

Method:

Season the meat with salt and black pepper.

Heat the groundnut oil in a pan, add the onions and fry for 2 minutes then stir in the garlic and tomatoes. Sit the veal steaks on top then cover the pan and allow to cook gently for about 40 minutes, or until the meat is tender.

Stir in the chopped peanuts and the water, bring to a boil and cooked for about 10 minutes, or until the sauce has thickened.

Serve hot with baked sweet potatoes.
