This is more of a family-style weeknight dish from Gibraltar, an easy to prepare dish that's delicious and comforting food.
Ingredients:
8 haddock fillets (or any other firm fish)
1 onion, chopped
2 garlic cloves, chopped
1 green bell pepper, chopped
500ml Tomate Casero or Tomate Frito
1 lemon, cut into wedges
2 tbsp flat-leaf parsley, shredded
salt and freshly-ground black pepper, to taste
Method:
Pre-heat your oven to 180°C.
Scatter the onion, garlic and bell pepper over the base of a baking dish.
Sit the fish on top then pour over the tomato sauce. Add in enough water so that the liquid covers the fish. Cut the lemon into fairly thin wedges and arrange these attractively on top of the dish. Scatter over the parsley.
Transfer the dish to the centre of your pre-heated oven and bake for an hour, until the fish is fully cooked through.
