Salsa de Tomate Frito (Fried Tomato Sauce) is a traditional Gibraltarian recipe for a classic sauce of fried tomatoes cooked with olive oil and flavoured with sugar and sherry vinegar. This is a classic Spanish tomato sauce that's also a part of the cuisine of Gibraltar.

Ingredients:

3.5kg tomatoes, into chunks
100ml extra-virgin olive oil
1 Spanish onion
1 head of garlic
50g brown sugar
1 tsp salt
4 tbsp Sherry vinegar

Method:

Set a large pan over medium heat. Add the olive oil and when hot use to fry the onion and garlic for about 8 minutes, until soft and translucent.

Season with salt and freshly-ground black pepper then add the tomatoes. Fry the mixture, stirring constantly, for 1 hour.

Stir in the sugar and vinegar, return to a simmer and continue cooking for 30 minutes.

You can either use the sauce as is or you can process with a stick blender to make it smooth.
